We begin with a delicate salting process before marinating the beef in rich malt vinegar and savoury Worcestershire sauce, adding a deep, umami character with subtle anchovy notes. The meat is then air-dried slowly to achieve the perfect texture—tender, yet satisfyingly firm.

Finished with a generous coating of cracked black pepper and a fragrant blend of roasted coriander and fennel seeds, every bite delivers a balance of spice, warmth, and natural beefy richness.
